Game on: four meats you should try

Norway is known for a select few inventions, and the ostehøvel, meaning cheese slicer, is amongst the most prominent ones. It was invented by Thor Bjørklund in the 1920s, in case you wondered.

The most famous cheese in Norway has traditionally been the brunost, or the brown cheese – caramelised whey cheese, quite similar to fudge, made with cow´s milk or goat´s milk. Norwegians normally eat it on high-quality bread, or on Norwegian waffles, often found at cosy cafés in the countryside. The taste of this cheese might not be for everyone, however, and many foreigners try it only once.

But the last few years, the most interesting Norwegian cheesemongers have made a much greater variety of products – everything from Camembert, blue cheese, chevre and brie to traditional products such as gamalost and pultost. Again, the clean and cold Norwegian surroundings provide the perfect platform for producing goat and cow milk of high quality. Today, you can find more than 150 small-scale cheesemakers, spread from the south of Norway to Finnmark in the north. Several of them are run by young and ambitious cheesemakers who are eager to experiment with techniques, spices and ripening.

We Norwegians are serious about our Christmas traditions. However, there are a lot of competing local varieties when it comes to the preferred festive foods. Here are some of the most common dishes during the Yuletide:

Ribbe
Roasted pork belly, usually served with sauerkraut and boiled potatoes, Christmas sausages, meatballs and gravy. Eaten by six out of ten households, mainly in Trøndelag and Eastern Norway.

Pinnekjøtt
Salted, dried, and sometimes smoked lamb ribs. These were traditionally steamed over birch branches &ndash hence the name (&ldquoPinnekjøtt&rdquo translates loosely to &ldquostick meat&rdquo). Norwegians&rsquo second most popular choice on Christmas Eve, particularly among people on the west coast.

Smalahove
Burnt, smoked and boiled sheep&rsquos head served whole with potatoes, mashed swedes, beer, and aquavit. Mostly eaten before Christmas in Fjord Norway, especially Voss.

Lutefisk
Stockfish that has been lying in water and lye (a way to preserve fish in the old days), then cooked in the oven. Typically accompanied by potatoes, bacon, pea stew, and mustard.

Multekrem
A dessert made of cloudberries and whipped cream.

Småkaker
Tradition dictates that seven different kinds of Christmas biscuits and/or cookies should feature on the table at Christmas, and that they all should be home-baked. The pepperkake (gingerbread cookies) is arguably the most popular of them.

Aquavit
Norway&rsquos national drink. A potato-based spirit flavoured with herbs such as caraway seeds, anise, dill, fennel and coriander. The preferred accompaniment to Christmas food.

Gløgg
The Norwegians&rsquo take on mulled wine, but made with a syrupy mixture as opposed to a herbal blend, with dried almonds and raisins added for taste.

Examples of Traditional Dishes

A triple layered savory pastry: A layer of chicken is covered with a layer of eggs and a lemony-onion sauce and then topped with a layer of crushed almonds. Everything is wrapped in phyllo pastry and delicately covered with cinnamon and sugar.

This traditionally Berber soup is usually served during the holy festival month of Ramadan. Also great for cold weather!

This roasted lamb dish is a great favorite! A paprika and cumin spice combination is pasted over the lamb and then it’s slowly cooked for about three hours. Generally seasoned with cumin & salt.

A Lesson in Moroccan Flavors

In Fez, food is the entryway to a culture that is traditionally quite closed, says cooking teacher Tara Stevens. Here, she shares her favorite recipes and introduces the locals, expats and visitors who most inspire her.

In Fez, food is the entryway to a culture that is traditionally quite closed, says cooking teacher Tara Stevens. Here, she shares her favorite recipes and introduces the locals, expats and visitors who most inspire her.

The Courtyeard Kitchen
Tara Stevens led me up a narrow, unmarked alley and through a gated door, to an even narrower alleyway. The 42-year-old British food writer and chef opened an old carved wooden door and ducked inside. We had stepped into her house and intimate new cooking school, The Courtyard Kitchen at Dar Namir in Fez, Morocco. The entrance room had a mosaic-tiled floor and walls that soared three stories up to the sky a well-equipped kitchen was tucked into an alcove.

Stevens came to Fez eight years ago, after hearing about a café opened by a former maître d’ from legendary London restaurant The Ivy. She ended up writing the Clock Book cookbook with him and buying a house. Now at the center of a group of expats and locals who are passionate about Moroccan food, Stevens is helping to build a more creative culinary community. She is also the woman to know for travelers who want to discover the city’s astonishing food scene. “This culture is very closed,” she explained to me, 𠇎specially for a woman. You can’t go into mosques and it’s difficult to strike up a conversation with locals. Food is the key that unlocks the doors.”

That night, Stevens served me a feast with some of her favorite cooking-school dishes: roast lamb shoulder in spiced butter, a green salad with beets and a creamy feta dressing. The Courtyard Kitchen is not your typical culinary program, she said: “When guests arrive, we discuss what they want to cook and see. I make a lavish breakfast, like scrambled eggs with desert truffle, and my almond cake. Then we head into the medina [the old walled city] to shop for a meal we’ll prepare together.” She added, “It’s like spending a few days with a fanatic foodie friend who cooks and eats and explores with you.”

The Market Experts: Plan-It Fez
When I asked to tour the medina in Fez, Stevens connected me with Gail Leonard.The British expat and her Australian friend Michele Reeves are the founders of Plan-It Fez, a travel company specializing in culinary trips throughout Morocco. Their adventures range from tasting the medina’s best street food to making hand-rolled couscous in a small village. As I followed Leonard down an alley lined with small shops, she told me that though she had lived in Fez for six years, she didn’t connect with the locals until she began using the communal bread oven. “When I brought my tagine pot to the neighborhood oven—still common here—someone would tell me, 𠆍on’t use too much cumin.’ Someone else would share the name of her butcher.”

At the Fez markets, Leonard encourages visitors to taste everything, especially her favorite dishes: maakouda (spicy potato fritters) and stuffed camel spleen sandwiches. “It’s like meatloaf,” she explained. She invariably heads to the vendor Nafis Hicham, who sells wild Atlas Mountain honey in a tile-lined shop. “Moroccans believe in the health benefits,” Leonard said, dipping a spoon into a blue plastic vat of honey flavored with carob. It tasted like caramel. �rob helps digestion,” she explained, then moved on to a vat that exuded a perfumed scent: “Lavender is good for stress.”

We wound our way through the medina to a nut vendor, where we bought a kilo of almonds. We brought them to a miller stall: On one side were hand grinders for meat on the other, mills for nuts and grains. Stevens had instructed us to have our almonds ground into flour in order to make her signature almond cake.

The Organic Farmer
A 10-minute cab ride from the city walls of Fez brought Stevens and me to a bumpy dirt track, then to a modest organic farm with vegetable gardens, corn and wheat fields, and animal pens. We were greeted by Meriem Farah, a slender twentysomething wearing a head scarf and Converse sneakers, then introduced to her parents as well as a half-dozen siblings and their young children. Her father and brother gave us a tour of the livestock: sheep, goats, cows, chickens and pigeons. Stevens had heard about the Farah family’s farm from a chef friend whom Meriem had contacted on Facebook. The news of an organic farm near the medina spread quickly through the local culinary community. Fez’s countryside is populated by small farmers, but none have ambitious, Internet-savvy daughters like Meriem.

“In a place like Fez, many young women are married off at the age of 13,” said Stevens. “It makes what Meriem is doing to promote her family’s farm especially impressive. She’s a sign of the next generation of Moroccans who can change things. She might have an advantage because there are seven women in this family and only two men.”

Meriem led us to a cornfield behind a small goat shed and sat us around a low table surrounded by small rugs and pillows. She poured us strong mint tea and offered a basket of khobz, warm flatbread made with freshly milled organic whole-wheat flours next came a tagine made with chicken that had been flavored with mint tea, then cooked with lots of parsley and mint, plus ginger and coriander. Meriem’s mother, Fatouma, is famous for the dish—justifiably so.

When force fed to a tamed herbivore, it restores 10% of the creature's maximum Health over the next 30 seconds, with a minimum of 500 HP and up to a maximum of 2100 HP restored. There is a 30-second delay before another one can be used. Herbivores (As of patch 252.8, carnivores as well, without having any effect) will consume it automatically as long as their health is below 85%.

Also since Patch 252.8 Carbonemys and Doedicurus no longer gain health from eating this dish.

It is also used to tame the Ovis and the Achatina. It is also the only food the Achatina will eat and will recover 500 Food upon consumption.

Sweet Vegetable Cake requires Water to cook. Be sure to include a Waterskin, Water Jar or Canteen with at least 25% water in the Cooking Pot. Die Industrial Cooker can use water from irrigation pipes instead of the water containers.

My Favourite Recipes

You'll notice that I tend not to be very precise about quantities (and sometimes about ingredients). The closest analogy I can come up with is from the world of music. Many performers spend their lives valiantly attempting to reproduce notes as documented in the sheet music. That is not to denigrate such efforts. The best classical performers make wonderful music and add their own unique colour and feeling to their output. But it's a search for reproducible perfection. I play jazz, or at least I try to. I like to extemporise, taking my cooking exactly where my mood dictates. Each time I cook a dish it will be different - recognisable as the same dish, but reflecting the mood of the moment. My toolset comprises my knowledge of ingredients, my techniques and my palate. With these invaluable friends in my kitchen I can close the cookbooks and make music.


Eating Okonomiyaki in Japan

You can enjoy this dish at okonomiyaki restaurants (Okonomiyaki-ya お好み焼き屋) throughout Japan. There are usually 3 dining options for these restaurants:

  1. At a counter in front of a huge teppan (iron griddle) where the chefs make them right in front of you.
  2. At a table which has built-in teppan (iron griddle), you can cook your own but the staff will help you make it if you ask.
  3. The okonomiyaki is prepared and made in the kitchen and they place it on a teppan (iron griddle) in front of you to keep it warm.

Besides restaurants, you can also purchase steaming hot okonomiyaki at street vendors during festivals (matsuri).

It’s not easy to replicate the food made on a hot iron griddle at home, and okonomiyaki made on the iron griddle simply tastes better. This is why sometimes I still choose to go to a restaurant even though I can make it easily at home.
